community/plasma-workspace: drop X11 support

Plasma defaults to Wayland since 6.0. Although still supported upstream for now it won't get new features and only bug-fixes. Currently KDE support in Alpine Linux is done by a one-man team, that is me, and I personally haven't used the X11 session in years. I have no need for it and rather have people use the Wayland session instead, it's less maintenance.
