testing/vym: fix doc installation

The manual page was being installed to usr/share/man. Other documentation was being installed to usr/share/ViewYourMind. Some docs, at least the manual page and the pdfs, were installed to usr/share/ViewYourMind/doc/vym. Relocated out-of-place docs to expected paths.
