main/xorg-server: set buildtype to plain

Sören Tempel requested to merge nmeum/aports:xorg-meson-buildtype into master

The plain buildtype does not seem to be the default. Unfortunately, this is the only buildtype which respect our CFLAGS/CXXFLAGS.
