[3.19] community/erlang: security upgrade to 26.2.1

Preparing a backport of !57212 (merged) for 3.19-stable (without the 2 aports in testing) to fix #15593 (closed).

Including the upgrade of community/mongooseim that i maintain as the release notes mentions support for Erlang 26.
