update-extlinux can't setup serial console
syslinux has a feature to run on a serial console for headless servers
(IPMI, Embedded, Virtual)
The appropriate setting is in the global area and called “SERIAL”
followed by the port number and baud rate.
An example entry looks like this:

A setting in update-extlinux.conf to configure it would need to allow setting the console port and speed.
