Changes to GNOME metapackage

There is a related issue which covers some parts (#13931 (closed)), but probably makes sense to keep things apart and some reference should help.

Ideas:

change gedit->gnome-text-editor: Since Cogitri will drop maintenance over gedit, and gedit is not part of GNOME core, I don't think the team should cover maintenance over it. So anybody willing to keep it up to date should maintain it.
change gnome-terminal->gnome-console
Remove gnome-screenshot: I have also no issue directly unmaintaining it.
