build uutils-coreutils with profile=release-small

Since Alpine profiles like lightweight distribution and, of course, the concern in my use-case is the size of the container, while I would like to support uutils as they do have tests and try hard to offer a great experience, the cost of extra ~ 3.5M in the container is too much for adding few commands, which are already included in busybox with basic features.

Does this kind of change make sense for an Alpine audience?
